- Peel the potatoes, cut into cubes and cook them until they are soft but still firm. About 5 minutes. Remove with the help of a slotted spoon and let it drain well. In the same water, cook the diced carrots for 5 minutes. Also remove with a slotted spoon, adding to the potato in a bowl. Blanch the pea in the same water for 2 minutes, and add to the potato and carrot. Chop the onion into small cubes and add to the vegetables. Reserve.
- In the meantime, let's go to the mayonnaise. In a small bowl, place the egg yolk, a pinch of salt, the lemon, mustard and black pepper to taste. Place a folded cloth under the bowl and, with the help of a wire whisk, beat the mixture and with the other hand add the oil until the mayonnaise assembles. It is important to beat constantly and add the oil slowly so that it has a firm consistency.
- Add the mayonnaise to the vegetables, season with the juice of half a lemon, adjust salt and pepper to taste. Finish with chopped green smell.
