- Salt1 to taste
- Tomato2 unit(s)
- Cucumber1 unit(s)
- Mint (leaves)10 unit(s)
- Black pepper1 to taste
- Olive oil2 tablespoon
- Crisp lettuce (leaves)4 unit(s)
- Onion1/2 unit(s)
- Lemon1 cup
- In a pan put the quinoa, 2 cups of water and a pinch of salt. Cook until soft. Pour into a sieve and let it drain for a few minutes.
- Cut the tomatoes, onion and cucumber into cubes. If you want to make the onion softer, cover with water, after chopped and leave for a few minutes. then drain well chop the mint
- In a bowl, place the quinoa, tomatoes, cucumber and onion. Season with salt, pepper, mint, olive oil and lemon.
- Serve with lettuce leaves cut into strips.
