- Cut all the ingredients into slices and set aside.
- To remove the bitterness from the eggplant: I soak it for 20 minutes in water with vinegar and a pinch of salt. Then just drain and dry well. I always start with the eggplant, because while it is soaking I cut the other ingredients.
- Season the vegetables with garlic, herbs, salt and oil.
- Start the assembly by putting tomato sauce on the bottom of the mold. And alternate a slice of each vegetable: green, yellow, red peppers, zucchini, onion, tomato, eggplant. I used a round shape. Assemble in the direction of the shape until all the ingredients are finished. Sprinkle with oregano and sauce.
- Cover with aluminum foil and bake in the oven for 20 minutes. Remove the paper and leave in the oven for another 10 minutes to brown the vegetables. I used medium heat.
