- medium zucchini, washed2 unit(s)
- Girl's Finger Pepper1/2 unit(s)
- Fresh mint leaves1 cup
- Zest and lemon juice1 unit(s)
- Olive oil1/3 cup
- Salt to taste
- Freshly ground white pepper to taste
- On the platter that you are going to serve the salad, place the chopped mint, the finely chopped chili pepper (remove the seed beforehand and wash your hands well), the lemon zest and juice (be careful not to drop the seeds), the oil, salt and black pepper. Mix well with a fork until well emulsified.
- Over this sauce, use a vegetable peeler to make thin strips with the zucchinis. The kernels with the seeds can be reserved for another preparation (soup, for example). When serving, mix the strips with the sauce. It's deliciously refreshing!
