- Japanese Cucumber, cut into cubes1/2 cup
- seedless watermelon cubes1 cup
- lemon (peel and juice)1 unit(s)
- Red onion, diced1/2 cup
- chopped mint1 tablespoon
- Cayenne Pepper and Salt to taste
- Mix all ingredients in a bowl. Grate the lemon zest on top. Squeeze the juice from the lemon. Season with pepper and salt to taste. Serve immediately.
