- Fennel or head fennel1 unit(s)
- Parsley leaves1 cup
- Red onion1/2 unit(s)
- Pitted Black Olives1/2 cup
- Bahia Orange2 unit(s)
- Salt and pepper to taste
- Olive oil3 tablespoon
- Cut the fennel finely. If you have leaves, you can add a little chopped too. (Save some leaves to sprinkle on top at the end! It's charming!)
- Finely cut the red onion into half moons and soak in ice water to remove excess acidity and make it crispier.
- Peel the orange (remove all the rind and the white part as well). Cut into wedges and remove the seeds if any.
- Combine the fennel, orange, onion, sliced olives in a bowl and season with olive oil, salt and black pepper to taste.
