- Diced Zucchini2 cup
- Diced eggplant2 cup
- Cubed pumpkin2 cup
- Coarsely chopped walnuts1/3 cup
- Olive oil2 tablespoon
- Red onion cut into half moons1 cup
- Sea Salt to taste
- Fresh rosemary to taste
- Mix all the ingredients well in a baking dish and bake in a preheated oven at 220ÂșC for about 20-25 minutes.
- Serve hot or cold.
