- Avocado1/2 unit(s)
- Salt to taste
- Chopped parsley and chives to taste
- Cherry tomatoes for garnish to taste

- I cooked the chayote and potatoes with water and salt until soft, drained all the water and set aside.
- In the blender I beat the avocado with a pinch of salt, 1 spoon of olive oil and half a lemon squeezed until it turned into a cream.
- I mixed the avocado mayonnaise with the cooled chayote and potato cubes.
- Finished with parsley, chives and tomatoes. Serve chilled, it's delicious.
