  • Quinoa1 cup
  • Tomato2 unit(s)
  • Cucumber1 unit(s)
  • Onion1 unit(s)
  • Fresh mint1/4 cup
  • Salt to taste
  • Olive Oil to taste
  • Lemon1 unit(s)
  • Black Pepper to taste
  • Parsley1/4 cup
  1. Soak the quinoa in water for 30 minutes.
  2. Chop parsley and mint
  3. Chop the onion into small cubes, add salt and juice of 1/2 lemon. Press with your hands. Reserve.
  4. Remove the seeds from the tomato and chop into small cubes.
  5. Chop the cucumber into small cubes.
  6. Cook the quinoa with enough salt and water to cover it for 5 minutes. Drain if there is any water left and allow to cool.
  7. Gently mix all the ingredients, season with olive oil, black pepper and juice of 1/2 lemon. Adjust the salt and you're done!
