- Quinoa1 cup
- Tomato2 unit(s)
- Cucumber1 unit(s)
- Onion1 unit(s)
- Fresh mint1/4 cup
- Salt to taste
- Olive Oil to taste
- Lemon1 unit(s)
- Black Pepper to taste
- Parsley1/4 cup
- Soak the quinoa in water for 30 minutes.
- Chop parsley and mint
- Chop the onion into small cubes, add salt and juice of 1/2 lemon. Press with your hands. Reserve.
- Remove the seeds from the tomato and chop into small cubes.
- Chop the cucumber into small cubes.
- Cook the quinoa with enough salt and water to cover it for 5 minutes. Drain if there is any water left and allow to cool.
- Gently mix all the ingredients, season with olive oil, black pepper and juice of 1/2 lemon. Adjust the salt and you're done!
