- First let's sauce !! In a bowl, place the yogurt, olive oil, lemon juice, mustard and honey, stir everything very well until smooth, add salt and set aside.
- Wash the green salads (I leave them very dry with the help of a paper towel) The cucumber wash well and dry (do not remove the skin it makes it crunchy).
- On a platter place the salads (lettuce, arugula), the cucumber in very thin slices. Then the mango cubes.
- I use chicken cubes (it could be that little grilled chicken left over from lunch 🙂) or I season about 2 fillets with seasonings to taste, I grill them and then I make the cubes.
- The crottouns you can buy ready-made or make at home is super fast and much tastier!! Crottouns bread cubes, rosemary, oregano and olive oil oven for 10 minutes.
- Add the chicken, then the sauce and finally the crouttons.
