Tropical Salad with Perfect Butter Beans

- Al dente cooked butter beans1 cup
- Bunch of Arugula1 unit(s)
- Cherry tomato200 g
- Sliced peach1 unit(s)
- Extra virgin olive oil to taste
- Pink or common salt to taste
- Squeezed lemon1/2 unit(s)
- Start by soaking the butter beans in water for at least 4 hours or preferably overnight (change the water a couple of times)
- Discard the water you soaked the beans in
- Put it in the pressure cooker with a tablespoon of salt and let it cook for 25 minutes.
- Remove the pressure and try the butter beans, they need to be Al dente (the beans do not form broth)
- Season the butter beans with extra virgin olive oil and salt to taste, take it to the fridge for about 30 minutes
- Start assembling your salad: In a salad bowl, place the arugula leaves, cherry tomatoes, butter beans and peach slices
- Season with olive oil, salt and lemon squeezed to taste
- Serve then 😉😋
