- An excellent salad option and also vegan! To do this, start by soaking the chickpeas for at least 12 hours - I like to leave them overnight. The other day, I put it under pressure for 30 minutes (put water in until it covers the chickpeas).
- While it's under pressure, I chop the red onion, tomato, bell pepper and parsley.
- Then drain the chickpeas and add the already chopped ingredients. Mix everything, hit the salt and water with olive oil.
