- Chopped coriander to taste

- Cook the carrots and the chayote with salt. Then drain the water and reserve.
- Heat the oil in a pan and sauté the onion until translucent.
- Then add the oregano and cilantro. Mix.
- Add the boiled carrots and chayote. Mix.
- Finally add the vinegar and mix.
