- Leaves (arugula, lettuce) to taste
- Wheat flour to taste
- Egg1 unit(s)
- Panko flour to taste
- For the mayonnaise: Beat the avocado, juice of half a lemon and the dijon mustard. Add the oil in a stream until it comes to a point.
- Chicken: Season the fillets with salt, pepper, paprika and olive oil and marinate for 4 hours. Dip the fillets in the flour, then in the beaten egg and finally in the panko flour. Fry in a little oil until the fillet is very dry. Brown on both sides. Place the already breaded fillets on a baking sheet, place the cheddar on top and send it to the oven until the cheese melts.
- Mounting: Add the avocado mayonnaise, the chicken with the cheese, and the leaves to complete.
