- Pork shank500 g
- Extra virgin olive oil3 tablespoon
- Chopped large onion1 unit(s)
- Ground Garlic Clove2 unit(s)
- Bay leaf1 unit(s)
- Dark beer600 ml
- Organic Honey Flowers of Aroeira3 tablespoon
- Tomato Passata6 tablespoon
- Spicy paprika1 teaspoon
- Ground black pepper to taste
- Salt to taste
- Chopped Tomato2 unit(s)
- French bread or baguette1 unit(s)
- Cut the shank into large cubes and heat the pressure cooker.
- Add the olive oil and onion and sauté until transparent, add the meat and ground garlic and sauté.
- Add the bay leaf, chopped tomato, tomato passata, paprika, salt, two tablespoons of honey and a cup of stout.
- Add a little water to cover, cover the pan and cook for 40 minutes (open the pan and if the meat is falling apart, turn it off, if not, leave it for a few more minutes)
- In another pan, place the rest of the beer and the honey and leave it on low heat, stirring occasionally until it reduces to a thick, dark and well-concentrated liquid.
- Shred the meat and put it in the pan along with the reduction of beer with honey, let it cook until the meat is more golden in color, adjust the salt and add the ground pepper to taste
- Mount your sandwich with French bread or baguette and that's it 🤤
