  • Eggplant2 unit(s)
  • Red Bell Pepper1 unit(s)
  • Zucchini1 unit(s)
  • Yellow bell pepper1 unit(s)
  • Onion1 unit(s)
  • Pitted Black Olives1/2 cup
  • Olive oil1 cup
  • Salt to taste
  • Oregano to taste
  1. Wash well, dry and cut all the vegetables into small cubes. Do not forget to remove the seeds from the peppers.
  2. Place on a baking sheet, season with salt and oregano.
  3. Water with the olive oil and take to the preheated oven for about 1 hour and a half. Stirring from time to time.
  4. Serve cold!
