- Oat flour1 cup
- Grated Parmesan Cheese3 tablespoon
- Milk1/2 cup
- Salt to taste
- Black pepper to taste
- Cut the eggplant into slices
- In a bowl, place the milk. And in another bowl, mix the oatmeal and the grated cheese.
- Dip the eggplant in the milk, and then in the flour + cheese mixture on both sides.
- Place on a non-stick baking sheet
- Bake in a preheated oven at 200°C for 20 minutes.
- Flip the eggplants halfway through.
