- Wash the eggplants and dry well with a cloth.
- Turn on the stove and place the eggplants in direct contact with the heat, turning every 2 minutes.
- After 10 minutes of this process, let the eggplants cool and peel them with your hands.
- Mash the eggplant pulp well and blend with a knife. Transfer to a bowl.
- Mix the remaining ingredients with the eggplants.
- Serve with pita bread.
