- Sliced Bacon400 g
- grated mozzarella150 g
- Salt1/2 tablespoon
- Black pepper to taste
- Nutmeg to taste
- Clean and peel the potatoes, leaving them to soak in a bowl of water, so they don't brown and lose some of the excess starch. Slice them with the help of a vegetable slicer (Mandolina), or with a thin knife.
- Mix the potato slices with the cream, salt, nutmeg and black pepper and set aside.
- Open a sheet of parchment paper and make a grid of bacon slices on it, large enough to cover the entire bottom of a roast.
- Preheat the oven to 160°C Grease a refractory with a little butter. Transfer the bacon weave lining the entire bottom of the bowl.
- Start alternating potatoes and mozzarella, starting with the potato until filling the entire refractory.
- Finally, cover with parchment paper and bake with a weight on top, such as a pan with 1 kg of coarse salt for example, it can be beans or any other grain as well. (Place the refractory on a baking sheet to prevent any liquid that falls from dirtying the oven)
- Bake for 90min. in the oven preheated to 160°C, remove from the oven and let it cool for 10min. before unmolding.
