- 6 large potatoes, washed500 g
- sliced bacon300 g
- 2 small onions, sliced100 g
- grated cheese200 g
- Butter25 g
- Sour cream100 g
- Chopped Parsley to taste
- Salt, Black Pepper to taste
- Pre heat the oven to 200ºC. Pierce the potatoes with a fork, put them in the oven and bake for 45 minutes or until tender.
- Remove them from the oven and lower the temperature to 180ºC.
- Meanwhile, heat a skillet and fry the bacon slices for 2 or 3 minutes, add the onion and fry for another 1 minute.
- Cut the 1/3 of the potato lid horizontally. With a spoon, remove the pulp from the potato and place it in a bowl.
- Reserve the hollow potatoes, placing them on a greased baking sheet.
- Crush the pulp with a fork. Add the butter, the cream and beat until you get a smooth puree.
- Add the grated cheese and bacon with the onion and season to taste.
- With a spoon, return the mixture to the potatoes and bake them for 20 to 25 minutes until the surface is golden. Sprinkle with parsley and serve while still hot.
