- Peel the potato and carrot. Cut all the vegetables into half moons.
- Place all the vegetables on a large platter. Add salt, black pepper and olive oil. With your hands, mix the seasoning until all the vegetables are well coated.
- Arrange the vegetables on the platter, making sure they are as tidy as possible and that most of them can touch the bottom of the platter.
- Bake in the oven at 200 degrees until well cooked. Keep stirring during the process, to turn. Then increase the oven to 230 to brown.
