- In a frying pan, put a thread of oil and take it to the fire then add the pepperoni, garlic, onion and paprika.
- Add a ladle with water, another with tomato extract, mix well, let it boil for 2 minutes, turn off and set aside.
- Soon after in a blender, place half of the cooked beans with the broth and half of the cassava flour, beat until it turns into a cream.
- If necessary add a little more water, repeat with the rest of the beans and the flour.
- Finally, in a large pan, place the oil and add the crushed garlic and let it brown slightly.
- Soon after, add the beaten beans and mix, correct the seasoning if necessary, then leave it on low heat until the broth is incorporated.
- Then, turn off the fire, transfer this mixture to a refractory, place the pepperoni, seasoned, the boiled egg slices on top and finish with chives and parsley.
