- Olive oil2 tablespoon
- Blonde to taste
- Salt1 teaspoon
- Peel and finely chop the onion. Peel and cut the beet into small cubes of 1 cm. In a kettle, bring a little more than 2 ½ cups (tea) of water to a low heat, until it boils.
- Place a medium saucepan over low heat. When hot, drizzle with oil and add the onion. Season with a pinch of salt and sauté for about 2 minutes, until wilted. Add the bay leaf, beetroot, rice and mix well.
- Measure 2 ½ cups (tea) of boiling water and pour over the rice. season with salt, mix and increase the heat to medium, do not stir further.
- As soon as the water reaches the same level as the rice, reduce the heat and partially cover the pan. Let it cook until the rice absorbs all the water – to check if the water has dried, pierce the rice with a fork and gently remove some grains from the bottom of the pan; if it's still wet, let it cook a little longer.
- Turn off the heat and keep the pan covered for 5 minutes before serving so that the beans finish cooking in their own steam. If you prefer, add some beetroot zest. Then loosen the beans with a fork, transfer to a bowl just to serve ready @gastaofitness
