- Cherry Tomatoes, halved300 g
- Sliced Onion1 unit(s)
- Minced Garlic Clove1 unit(s)
- Chopped Ginger Finger1 unit(s)
- Tomato Extract1 teaspoon
- Unsalted Peanut Butter1/2 cup
- Natural coconut milk2 cup
- Turmeric Powder1 teaspoon
- Cayenne Pepper1/2 coffee spoon
- Chopped coriander1/2 unit(s)
- Salt and pepper to taste
- Sunflower oil to taste
- In a pan add oil and onion and fry until translucent.
- Add the garlic and ginger and sauté for a few more minutes until the garlic is lightly browned.
- Add the tomatoes, extract and spices and sauté well until they release aroma.
- Add the peanut butter, coconut milk and mix to dissolve the paste in the milk, forming a cream.
- Let the cream boil for about five minutes or until it thickens slightly, then add the chopped kale.
- Let it boil enough for them to wilt and turn off the heat.
- Finish with chopped cilantro, salt and pepper.
