- Red Pepper1 unit(s)
- Onion slices1 unit(s)
- Minced garlic1 unit(s)
- Olive oil to taste
- Salt1 teaspoon
- Seasonings: paprika, oregano, black pepper to taste
- Cut the eggplant and peppers into medium strips
- Place the eggplant, peppers, onion, garlic, salt, olive oil and seasonings in the roasting pan and mix well.
- Take it to the preheated oven at 180°C after 15 minutes remove and mix with the help of 2 Spoons and put it back in the oven
- repeat the process of removing and mixing every 10 minutes for 3 times or until everything is cooked.
- Transfer to a container with a lid and let it cool.
- Serve with toast!
