- Salt to taste
- Olive oil to taste
- Oregano to taste
- Red wine1 cup
- Start by cutting the eggplant, onion, peppers into cubes. Transfer the cut ingredients to a bowl and add the other ingredients, mix well and transfer to a refractory, cover with aluminum foil and bake in a preheated oven at 180c for 45min. After 30 minutes remove the foil and let it finish baking. Serve hot or even iced.
