- Clean peppers, halved and seeded3 unit(s)
- Olive oil1 tablespoon
- Quinoa150 g
- Cherry Tomatoes100 g
- Pepper flakes1 tablespoon
- Fresh Basil2 tablespoon
- Pitted Black Olives50 g
- Sicilian lemon zest1 teaspoon
- Fresh Basil1 tablespoon
- crumbled ricotta1 tablespoon
- Cut the peppers in half, remove the seeds and white veins. Season with olive oil, salt and pepper, bake at 200 degrees for 20 minutes.
- Cook the quinoa in 2 cups of boiling water for 10 minutes (or until the quinoa is dry and the kernels are open).
- In a bowl, add the tomatoes, basil, salt, pepperoni, olive oil and lemon zest. Mix well and add to the already cooked quinoa.
- Stuff the peppers with quinoa, add olives, ricotta, serve with a drizzle of olive oil.
