- Medium Cauliflower800 g
- Butter with salt2 tablespoon
- Wheat flour2 tablespoon
- Milk500 ml
- Salt and pepper to taste
- Nutmeg to taste
- White wine vinegar1 tablespoon
- Water1 l
- Grated Parmesan1 cup
- Cut the cauliflower into florets and cook in boiling water with 1 tablespoon of white vinegar and salt to taste for ten minutes. Drain and reserve. In a pan over medium heat, place the butter until it melts, add the wheat flour and stir well. When it starts to foam from the boil, add the milk and mix using a whisk until it thickens. At this time, lower the heat and let it cook for 3 minutes, always stirring. Turn off the heat, season with salt, pepper and nutmeg. Place the cauliflower in a refractory that can go in the oven and drizzle with the white sauce. Distribute the grated Parmesan all over the cauliflower and take it to the oven already preheated to 180 degrees for about 20 minutes. Until it turns golden.
