Cauliflower rice with carrots, peas and orange zest

- Grated Cauliflower Head1 unit(s)
- Carrots, diced1 unit(s)
- Frozen peas1/2 cup
- Olive oil1 tablespoon
- Chopped Onion1/2 unit(s)
- Minced Garlic Clove3 unit(s)
- Orange zest1 unit(s)
- Shoyu or Coconut Aminos2 tablespoon
- Salt and pepper to taste
- Heat a large skillet with the olive oil.
- Sauté the onion and then the garlic.
- Add the carrot until it softens slightly (I like it tougher)
- When it starts to soften, throw in the peas.
- Add the soy sauce or coconut aminos and mix everything together.
- Finally, sauté the grated cauliflower for about 2 minutes, turn off the heat and throw in the orange zest. Taste to see if you need to adjust the seasoning.
- Finish with the seasonings and, if you prefer, fresh herbs, such as coriander or parsley.
