- Cabbage200 g
- Eggs2 unit(s)
- Thin smoked sausage2 unit(s)
- Couscous4 tablespoon
- Onion1 unit(s)
- Garlic Cloves4 unit(s)
- Olive oil to taste
- Butter to taste
- Salt and pepper to taste
- Clean the cabbage leaves and chop finely.
- Cut the sausages into small cubes.
- Chop the onion into rings.
- Chop the garlic.
- Soak the couscous for 10 minutes, then cook in a couscous pan for another 10 minutes.
- Meanwhile, in a large skillet, heat a drizzle of olive oil and fry the sausage with a pinch of black pepper.
- Add the onion and a pinch of salt and cook over low heat until translucent.
- Add the garlic and let it sauté until golden.
- Add the kale and a spoonful of butter and mix everything together and raise the heat to medium.
- When the kale has wilted, add the cooked couscous. Mix well.
- Make a space in the center of the skillet and add the eggs. Let them set a little before starting to mix, so that they are "lumpy".
- Mix well, turn off the heat, put a spoon of butter on top and cover.
- Let it rest for 5 minutes. Stir well and serve.
