- Heat the milk until it boils. Turn off the heat and stir in the lemon. Wait until the milk curdles and drain in a sieve. Put the ricotta that stayed in the sieve in a blender. Add a pinch of salt and butter. Beat well until the cottage cheese is creamy. Keep in the fridge.
