- Discard the leaves and stem base and cut the cauliflower, including the stem, into medium-sized pieces. Transfer to a bowl, wash well with water and drain. In a medium saucepan, place the washed cauliflower, water, milk and bay leaf. Season with salt and white pepper and place over medium heat. When it boils, let it cook for about 15 minutes, until the cauliflower is tender. Turn off the heat and reserve 1 cup (tea) of the cooking liquid. Discard the bay leaf, and transfer the cauliflower without the liquid to the blender, add a spoon of margarine to the blender. Beat until the puree is smooth and creamy - if necessary, gradually add the reserved cooking liquid. Taste, adjust the salt and serve next.
