- Chopped Calabrian Sausage1 cup
- Fine cassava flour1.5 cup
- Straw potato100 g
- Chopped Onion1/4 cup
- Chopped Garlic1 dessert spoon
- Chopped green onion to taste
- Sea Salt to taste
- Smoked paprika1 coffee spoon
- Oil1/4 cup
- In a pan heat the oil and brown the onion.
- Add the sausage and fry well.
- Add the garlic and fry for 1 minute.
- Add the paprika and mix.
- Then add the flour, salt and chives.
- Keep stirring over low heat, testing the flour well.
- Add the straw potato and mix more until the farofa is very dry and crispy.
- Transfer to another container and let cool completely before serving.
