- Fry the carrots, chopped for 5 minutes over medium heat. Add the green onion and garlic, fry for 7 minutes over medium heat.
- Add spinach and fry for 7 minutes over medium heat. Blanch the tomatoes in boiling salted water for 3 minutes over moderate heat.
- Soak them in cold water for about 5 minutes, then peel them and cut them into small pieces.
- Add them to the spinach, let it fry for 10 minutes over moderate heat.
- With a spoon, make nests and break 1 egg in each one. Salt the eggs and sprinkle with paprika. Cover the pan with a lid and leave for 5 minutes over moderately low heat.
