- Large eggplant3 unit(s)
- Shredded Chicken to taste
- Onion1 unit(s)
- Tomato2 unit(s)
- Saffron to taste
- Onion powder to taste
- Garlic Powder to taste
- Salt to taste
- Parsley or cilantro to taste
- Garlic Clove3 unit(s)
- Sauce of your choice. to taste
- Grated cheese or mozzarella to taste
- Sauté the chicken with the onion, garlic, tomato, salt, parsley, garlic powder and saffron. (I used these seasonings, but you can use the ones you are used to).
- Cut the eggplants into long slices, not too thin.
- In a frying pan with a little oil, brown the eggplant on both sides quickly, (don't get too soft).
- Then, place the stuffing on one end of the eggplant and roll until the end.
- Place on a baking sheet and pour over the sauce of your choice and the sauce.
- Place in the oven to brown and enjoy.
- Fast, easy and practical. ☺️
