- Shredded and desalted Codfish500 g
- Asterix potato500 kg
- Coriander1 unit(s)
- Roasted Garlic50 g
- Panko flour100 g
- Egg2 unit(s)
- Panko flour100 g
- Salt/Pepper to taste
- Oil or olive oil500 ml
- In a pressure cooker, add the whole unpeeled potatoes, for 25 minutes, let the pressure release naturally, remove the peel and mash until it turns into a puree
- cut the cilantro
- Place the cooled mashed potatoes, shredded and salted cod in a bowl, add the fried garlic, egg yolks and coriander
- Adjust the salt and add black pepper (optional)
- Add 100g of panko flour and mix with your hands until you get a firm dough, mold and roll in the other 100g of panko flour
- In a skillet add the oil or olive oil and fry the dumplings submerged in the oil, drain and serve
