- Coconut milk (1 bottle)*200 ml
- Water*250 ml
- Butter3 tablespoon
- Wheat flour3 tablespoon
- Chopped Onion1/2 unit(s)
- Grated Parmesan to taste

- The whole process must be done on low heat.
- Cut the chayote into cubes, season with salt and set aside.
- In a pan, sauté the onion in the butter until the butter is completely melted. Add the flour and stir constantly until the butter has incorporated all the flour. Add the coconut milk and water and mix well until it thickens. It is important to make sure that there is no flour pellet left. Season with salt, pepper and nutmeg. Add the chayote to the pan, stir well and let it simmer for 5 minutes with the pan closed, stirring occasionally so it doesn't stick.
- Transfer to a baking sheet, sprinkle Parmesan cheese on top and bake for 20 minutes (230°). If your oven has the grill function, it is worth leaving another 5 minutes in this function.
- *If you don't like the taste of coconut milk in savory recipes, you can replace coconut milk and water with any plant-based milk of your choice or milk. In this case, add 450ml of the desired liquid.
