- egg whites3 unit(s)
- Milk1 cup
- Whole wheat flour1 tablespoon
- Light Parmesan3 tablespoon
- Onion1 unit(s)
- Olive oil1 tablespoon
- Nutmeg, salt, pepper to taste
- Butter1 coffee spoon
- Mix the wheat flour in the skimmed milk to dissolve and place over medium heat, stirring until it has a thicker consistency.
- Season with black pepper, nutmeg and salt to taste and turn off the heat. In another pan, sauté the onion in olive oil and place the zucchini, broccoli and carrot, mix well and keep stirring for a few minutes. Place the reserved cream on top of the vegetables, add the Parmesan and mix everything together. Reserve.
- Whip the egg whites until stiff. Place the egg whites in the cream mixture gently with the cooled sautéed vegetables. Now place the mixture on a buttered baking sheet.
- Bake in a preheated oven at 190 degrees for 15 to 20 minutes or until golden and rising.
