- Put the egg and yolks in the blender, along with all the other ingredients, except the oil! Beat everything on low speed until you get a homogeneous mixture.
- Then increase the speed to medium and add the oil to the point of thread, until all the oil is used.
- Be careful not to interrupt the wire or spill too much at once.
- The mayonnaise will be ready once you've added all the oil.
- after finishing, let it beat for about 5 seconds. If you apply the mayonnaise, you run the risk of going wrong.
- Tip: if you want a more citrus-sweet content, use the juice of half a Sicilian lemon, clove orange or tangerine. Just pay attention to the size of the lemon, for this recipe I used half a small Tahiti lemon, so it will be the same proportion of juice for the others.
- Tip: herbs and garlic can be added after the mayonnaise is ready, chopped and the garlic is sauteed or fried.
- Tip: you can vary in herbs, it's up to you.
- Caution!!! Don't make a doubled mayonnaise recipe if your blender doesn't have the capacity, it can burn and the mayonnaise won't reach the right point.
