- Oil (corn or compost)1 l
- Green olive with pit200 g
- Black olive with pit200 g
- Garlic head1 unit(s)
- Rosemary sprig1 unit(s)
- Bay leaves4 unit(s)
- Chop the green and black olives until the seeds
- Crush the garlic cloves, without crushing them, just to leave an opening
- Reserve everything in a sterilized glass container.
- Add the rosemary sprig and bay leaves
- Cover the entire contents with oil
- Cover airtight and let it rest for at least 20 days (ideally 30) in a mild place without sunlight
- Transfer the oil to another container leaving the olives, garlic, bay leaves and rosemary
- Your oil is ready to use
- Other seasonings such as pepper, onion and other condiments can be used
- Olives, garlic, bay leaves and rosemary do not need to be discarded, they can be used in other recipes such as soups, broths and beans
