- Carioca beans1 kg
- Onion0.5 unit(s)
- Garlic Cloves4 unit(s)
- Olive oil1 tablespoon
- Bay Leaves2 unit(s)
- Alcohol Vinegar3 tablespoon
- Salt to taste
- Soak the beans for at least 24 hours, changing the water every 12 hours. In the last sauce, add the vinegar and leave for at least 15 minutes.
- Rinse well and place in the pressure cooker with enough water to cover and leave 2 fingers.
- Wait for it to boil, and remove ALL the foam that will form. (Photo 2)
- After removing the foam, cover the pan and let it cook for exactly 10 minutes. Turn off the heat and wait for the pressure to release.
- Meanwhile, finely chop the onion and garlic. Heat a pan with the oil and sauté the onion for about 2 minutes, add the garlic and let it sauté until golden.
- Turn the stew in the pan with the beans, add the bay leaves and season with salt. Let it boil for about 5 minutes.
