- Before starting, soak the beans in a bowl of water for about 3 hours. Remove this water and transfer the beans to a pressure cooker; Cover with water, letting 2 fingers of water pass over the beans; Add the bay leaves, cover the pan and place over high heat; When it starts to get pressure, let it cook for 20 minutes; TIP: the point is when the beans are al dente. Turn off the fire, wait for the pressure to come out and strain the beans in a sieve and set aside; In a large pan or skillet, sauté the bacon together with the sausage until golden brown, set aside; heat a frying pan with a thread of olive oil or oil and place the eggs; stir for a few minutes until the eggs are cooked; Reserve. Then brown the onion together with the garlic, add the bacon and the sautéed pepperoni, the cooked beans, the scrambled eggs and the salt; Sauté for another 2 minutes and then add the cassava flour little by little while mixing; To finish, sprinkle parsley on top and serve immediately.
