- Buffalo Mozzarella250 g
- cherry tomato200 g
- Garlic Cloves3 unit(s)
- Olive oil to taste
- Dried Basil to taste
- Dried Thyme to taste
- Dried Rosemary to taste
- Fresh Basil250 g
- Nuts2 tablespoon
- Garlic Clove1 unit(s)
- Olive oil30 ml
- Sicilian lemon1/2 unit(s)
- Grated Parmesan Cheese100 g
- Salt and pepper to taste
- Preheat the oven to 160 degrees for 10 minutes. In a roasting pan, add the tomatoes, 3 cloves of garlic and season with olive oil and dried basil, thyme and rosemary. Mix and bake for 40 minutes.
- In a blender or food processor, combine the fresh basil, walnuts, garlic cloves, olive oil, squeezed lemon, parmesan, salt and pepper. Pulse until you get a grainy consistency.
- In a shallow dish, place the buffalo mozzarella, season with the pesto and roasted tomatoes and serve immediately.
