- Clean the stomach and guts well, remove all the fat and cut into small pieces. I like to open the gut and remove the fat that remains inside.
- Cut the paw into small pieces.
- Add the juice of one lemon, mix well, wait two minutes and wash.
- Put it in a pressure cooker, add all the seasonings, take it to the fire to sauté, after being well sautéed, put water and leave it under pressure until everything is very soft.
- Note: It takes time to cook and to be good you can only remove it from the heat when it is really soft, don't leave any broth, I particularly like it to be well refined.
