- Cooked pasta (fusilli or penne)2 cup
- Made cheese200 g
- Olive oil1 tablespoon
- Minced Garlic Clove2 unit(s)
- Sicilian lemon juice and zest1/2 unit(s)
- Spinach leaves1 cup
- Macaroni Cooking Water1/4 cup
- Grated Parmesan cheese (optional) to taste
- Salt and pepper to taste
- In a large skillet, heat the olive oil over medium heat.
- With it hot, add the garlic and sauté for 1 min.
- Lower the heat and add the cheese, stirring until it starts to melt. In the middle of the process, add the pasta water to give it more creaminess.
- With the melted cheese, add the cooked macaroni and stir until everything is mixed.
- Then add the lemon juice, zest and spinach.
- Turn off the heat and adjust the seasoning with salt and pepper. If desired, add grated cheese. And it's ready to serve.
