- Cashew Nuts75 g
- Parmesan cheese100 g
- Olive oil400 ml
- Ice cube1 unit(s)
- Salt and pepper to taste
- Peel the basil, put it in the blender
- Add the oil and the ice cubes, beat for 30s to 1min.
- Add the chestnuts and grated Parmesan and beat until smooth, if necessary add a little more oil.
- Add salt and pepper and mix with a spoon.
- TIP: this sauce can be frozen to be used at other times
