- Start by separating all the ingredients. If you want, you can increase the recipe for this tomato rice, just double the quantities and you will have a recipe for 4 to 5 people. You will also need to separate a pan and a spatula or large spoon.
- Heat a pan with olive oil and sauté the onion until it begins to wilt and become transparent, at this point add the finely chopped bell pepper.
- After the peppers soften and the onion begins to brown, add the rice.
- Mix all the ingredients very well so that the rice is all wrapped in oil.
- Add the peeled tomato with all the sauce in the can. Mix very well.
- Add the water. At this point add the salt and pepper, which can be to taste! Cover the pan and cook until the rice is soft but there is still a bit of thicker liquid left in the pan.
- Tip: if you have vegetable broth at home, you can use it, as it will add a lot of flavor to your tomato rice.
- The idea is to serve a rice that is not dry and fluffy, but a creamier rice. Therefore, as soon as it is ready, serve it immediately so that it does not dry out.
- Take care when serving the dish. My final tip is to grind more pepper on the plate, drizzle with olive oil and, if you have a vegetable garden like me, enjoy and decorate your plate with your favorite aromatic herb. I chose basil today!

- If you like cheese, know that buffalo mozzarella will go very well with this delicious tomato rice;
- The original tomato rice recipe is made with ripe, skinless tomatoes. If you're lucky enough to find ripe tomatoes, you can use 5 in place of the can!
