Potatoes with White Sauce and Bacon

- Very large English potatoes, peeled, cut into medium cubes and cooked with salt and 2 bay leaves2 unit(s)
- Bacon, skinless, cut into small cubes150 g
- Finely chopped onion (1/4 onion)3 tablespoon
- Wheat flour (shallow spoons)2 tablespoon
- Whole milk600 ml
- Salt, black pepper and ground nutmeg to taste
- Fresh or grated Parmesan cheese3 tablespoon
- Cottage cheese2 tablespoon
- Cook the chopped potatoes, but take care that they are not too soft, drain them from the cooking water and place them in a refractory that can go in the oven;
- In a pan, fry the bacon until it starts to release its fat, drain and reserve;
- In the same pan, with the bacon fat, sauté the chopped onion until it starts to brown;
- Add the wheat flour and sauté for a couple of minutes. Pour in all the milk and with the help of a fowe, stir well! Season with salt, nutmeg and black pepper to taste! Cook well for about five minutes and, if necessary, add a little more milk to adjust the sauce! Turn off the heat and add the cottage cheese and a little bit of grated Parmesan cheese! Mix well!
- Pour all the white sauce over the potatoes, sprinkle the rest of the Parmesan cheese and put it in the oven for fixings!
- After fixings, finish with the fried bacon on top and just enjoy!
