- Sliced pepperoni1/2 unit(s)
- Diced Bacon100 g
- Bacon rind40 g
- Cubes of tenderloin or shank300 g
- Butter1 tablespoon
- Salt to taste
- Green smell to taste
- Large minced garlic cloves3 unit(s)
- Soak the beans for at least 3 hours
- In the pressure cooker, brown the bacon until it releases fat. Book the bacon.
- In the same pan, brown the ham cubes, as soon as they are golden, add the pepperoni, the bacon, the bacon rind and the drained beans.
- Cover with enough water to exceed 2 fingers of the bean limit. Prep time will vary greatly depending on whether your grain was new and how long it was soaked. My beans were new and it took 10 minutes for them to become soft after being pressed. Reserve.
- In another smaller pan, you will melt the butter, brown the garlic and add about 20% of the cooked beans, mash the beans and let it cook until creamy.
- Return these beans to the pressure cooker, adjust the salt and mix. You will notice that the broth will be very creamy, if necessary, turn on the heat and let it simmer a little longer.
- Finish with green smell and enjoy!
