- Dry red wine100 ml
- Sugar1 tablespoon
- Worcestershire sauce2 tablespoon
- Water100 ml
- Cold butter1 tablespoon
- Salt and pepper to taste
- Cut the onions into julienne (strips). Take it to sauté in the same pan in which you made the meat to enjoy that little bottom.
- Add a pinch of salt and sugar. When it starts to caramelize, add the wine and wait for it to reduce by half (or until you no longer smell alcohol).
- Add the water and let this sauce cook on low heat until it thickens.
- At the end, turn off the heat and add a generous spoonful of cold butter. This will bring shine and silkiness to your sauce. Serve it hot!
